Regarding the middle post, I believe they do not keep it there is to make sure the ball stays in the net and not come out after a goal. It just makes it easier to tell if a goal is scored or not. Thats what I believe.
As for the pegs, they are playing on an ice surface. So it would be very difficult for them to be able to put pegs into the ice for a lacrosse net. I have seen this use a modified net at some of my rep games. They have a flat piece at the bottom of the post which extends out and you can place this into the hockey peg hole. This may be a bit dangerous as the people run into the crease sometimes after a shot.
